Culinary Wednesday

It snowed 6 inches last night here in Chicago. What's it like in Altoona land? We were having a mild winter, but it seems we are making up for it now. Snow always makes me crave a steaming hot bowl of soup. When we were growing up, my mom or dad almost always cooked up a pot of french onion soup, topped with provolone cheese melted perfectly in the oven. A few months ago my mom made that for us here in Chicago while they were visiting. It does seem to hit the spot. One of my personal favorites soups to make is white chicken chili. It's a recipe from my very best neighbor friend in Altoona, Jen. It's so easy to put together and I love making it on snowy days. Here you go:


one pound of cooked chicken, cut up into bite sized pieces, one can of chicken broth, one can of chopped green chiles, garlic, salt, basil, pepper and oregano. Simmer for one half hour and top with sour cream and cheddar cheese. We love to dip warm tortillas in this soup. Enjoy!
