How much snow did everyone get in Altoona? Here in the Chicago suburbs we got about 12 inches. No school yesterday, but today was business as usual. With the snow looking so pretty out my window today, I decided to throw together vegetable beef soup with the help of my lovely crockpot. This is my mom's recipe. Very simple but hits the spot.

Ingredients: 1 3/4 c. swanson beef broth, 2 medium potatoes, 1 c. cubed beef, 3 c. V8 100% vegetable juice, 1 can 8 oz. whole peeled tomoato, cut up, 1 bag 16 oz. frozen mixed vegetables, garlic salt, 1/8 tsp. black pepper, 2 celery stalks diced, 1 onion diced

Put everything in crockpot on low for at least 8 hours. Serve with warm bread! Happy sledding, snowman making or fort building!
