Culinary Wednesday

April 10, 2013 - Kristy MacKaben
My sister is trying to convince me to try the Whole30 diet again. Not sure if you remember, but I tried that around this time last year. It's so good for you, but it's so hard! Basically you can't eat anything processed. Fine. Here's the rest of what you can't eat: dairy, sugars, carbs, beans, corn, diet soda. AAAH! Not my beloved Diet Pepsi! OK. I will try, but with some modifications. I really don't see the need to give up beans and corn, since I love those things, and I truly don't believe they are evil. So, today I plan to make homemade hummus. Technically chicpeas would not be allowed with Whole30 because they are a bean, but I really don't see the harm. I'm just calling this diet: WholeKristy. By the way, this is my own little hummus recipe. Also, you don't need to slather it on carb-y pita bread. It's delicious with carrots, cucumbers, or even make a lettuce wrap.

Ingredients: chicpeas (2 cans are fine for me, but you might want more.), olive oil (a couple tablespoons are enough), crushed garlic (I use a ton), one tablespoon tahini, five tablespoons lemon juice, red peppers (sautée first in olive oil)

Place all the ingredients in a food processor and give it a whirl. Then, serve it on whatever you like. If you have any additions or subtractions, please share!
