A few weeks ago I had the best appetizer at a local restaurant here in the Chicago suburbs: smoked salmon stuffed with goat cheese. Two of my favorite things and absolutely divine! I really wanted to replicate the appetizer, but it's nearly impossible to find smoked salmon pieces big enough to stuff. So, I created an appetizer that I'm sure I will serve whenever we have company.

There are four ingredients: smoked salmon, goat cheese, small toast crackers and capers. Can't get much simpler than that. Simply smear goat cheese on top of the crackers, followed by a small piece of smoked salmon and top with a few capers. So easy, yet such a delicious taste. And, they look great too!
