Eat This: CrockPot Potatoes Au Gratin!

In case you didn't know, au gratin is french for "super delish potatoes with cheese. You can do them lots of ways but if you do them in the crockpot it's like food magic!

5 medium-sized potatoes Salt Pepper 3 tablespoons of butter 3 tablespoons white flour 1 clove of garlic (peeled and minced) 1 onion (peeled and sliced) 1 cup of milk 1 cup shredded cheddar cheese Chives to taste

Wash, peel, and slice the potatoes (thin discs).

Line the bottom of the crockpot with a layer of spuds. Then add salt and pepper to taste. Repeat until taters are all layered.

Now melt the butter in a pot and whisk in the flour until you have a thickened doughy thing. Add sliced onions, minced garlic and while whisking gradually add milk.

Once the milk is incorporated, add the shredded cheese and whisk until the mixture is a thick smooth sauce. (or to your choice of consistency if you want some lumps of gooey cheese).

Dump that cheese sauce goodness on top of the layered potatoes and tip the pot a bit to get the sauce in everywhere (but don't upset the layers too much).

Cook on high for about 3 hours - checking occasionally that the potatoes are fork tender and cooked to your desirable consistency in your cooker.
